Lemon Cheese Cake


Sourly lemon that Moo away with the milky cheese cake makes a perfect blast of sparkle taste. For those cake lover who love lemon but can't take it too sour, this cheese cake will be just perfect for you. Silky moo milk tenderize your taste bud with the sprinkle of spark of lemon to zest it away. This is the cake that you just can't miss it.

Ingredients

50g vanilla wafers, finely crushed
40g butter, melted
3 tablespoons sugar
340g cream cheese
1/2 cup lemon juice
1/2 cup sugar
2 eggs, beaten
1 cup sour cream
zest of 2 lemons
4 tablespoons sugar

Directions

1. Preheat the oven to 180ÂșC.
2. Mix vanilla wafer crumbs, melted butter and sugar together.
3. Press mixture firmly on bottom and sides of buttered 20cm springform tin.
4. Blend cream cheese and lemon juice, add sugar and beat until smooth.
5. Add eggs one at a time, mixing thoroughly after each addition.
6. Pour into base, then bake for 20 mins or until firm.
7. Remove from the oven and cool for 5 mins.
8. Mix sour cream,grated lemon zest and sugar, then spread over cheesecake.
9. Bake 10 mins longer.
10. Cool, chill in fridge for at least 5 hours before serving.

*Serve with whipped cream.
