Mango Cheesecake Tops with Rock Melon

Mango Cheesecake

This mango cheesecake is so creamy that with complimentary of the rock melon making it so tasty. Here are the ingredients for you to enjoy. Bon appétit

90g butter
250g digestive biscuits, finely crushed
200g cream cheese
50g sugar
1 mango
1 1/2 tablespoons gelatine
2/3 cup thickened cream, whipped

Directions
1. Melt the butter and stir in the biscuit crumbs.
2. Press into the base of a lined 20cm springform tin. Chill until firm.
3. Place the cream cheese and sugar in a bowl and beat together.
4. Peel, stone and puree 1 mango, add to the cheese and sugar and mix well.
5. Dissolve the gelatine in 1/4 cup warm water, add to the mango mixture, then add the cream.
6. Mix well, spoon into the cake tin and smooth the surface. Place in fridge until set.
7. Chop some fruits (ie: Honeydew, Rock Melon, Mango) to decorate the cheesecake.

* Serve with extra whipped cream to increase the creamy flavour.
