Chocolate Caramel Cheesecake

Sorry Ee, took me so so long to write back the recipe you requested. Kinda busy with traveling and other stuffs. Hope this recipe is not too late for you to try.

Ingredients
150g digestive biscuits, finely crushed
50g butter, melted
1/4 cups evaporated milk
380g canned caramel
500g cream cheese
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup chocolate chips, melted

Directions
1. Preheat oven to 180〫C.
2. Combine crumbs and melted butter. Press evenly into a 23cm springform tin. Bake for 8 mins.
3. Combine milk and caramel in a heavy-based saucepan. Cook over low heat until melted and stir frequently.
4. Pour over biscuit base. Set aside.
5. Beat cream cheese at high speed until light and fluffy. Gradually add sugar.
6. Add eggs one at a time, beating well after each addition.
7. Stir in vanilla and melted chocolate, beat until blended. Pour over to your biscuit base.
8. Bake for 30 mins. Remove from oven and run knife around edge of tin to release sides.
9. Cool to room temperature. Cover and chill for 8 hours.
10. (Optional) you can serve with whipped cream.

  2. I saw you once in SS2 near the bridal shop while you were driving your blue car. I think it was somewhere around Wednesday after Raya week. Yeah Summer now is more daring, dare to bark and more approachable. Wish we can meet up soon. :)
