Durian Cheesecake






150g Oreo biscuits, finely crushed
250g cream cheese
70g caster sugar
250g durian flesh
1/2 cup plain yoghurt
3/4 cup thickened cream
1 tablespoon gelatin

Directions
1. Preheat the oven to 180°c.
2. Finely crush Oreo biscuit into crumbs.
3. Press into the base of a lined 20cm springform tin. Chill until firm.
4. Add the gelatin to 2 1/2 tablespoons warm water, dissolve and set aside.
5. Place the cream cheese and sugar in a bowl and beat together until well combined.
6. Add the durian flesh and continue to beat until well combined.
7. Pour in gelatin mixture and yoghurt, stir until combined.
8. Add the cream and slowly stir until the mixture is creamy and well mixed.
9. Pour the filling into the tin and chill for at least 3 hours or overnight.

ENJOY the combination of the king of fruits with the cheesy cheese!
